Here are some healthy tasty recipes to take you from now until Memorial Day.
Strawberry Spinach Salad with Blueberry and Feta
Spinach summer salad with sweet fresh strawberries and blueberries and salty feta cheese. Perfect for Memorial Day.
6 ounces baby spinach leaves
2 cups fresh strawberries, hulled and quartered
2 cups fresh blueberries
6 ounces feta cheese, crumbled
1/2 cup sliced toasted almonds (optional)
balsamic vinaigrette or poppy seed dressing
Distribute the baby spinach greens evenly between 4 salad bowls or plates. Top each salad evenly with strawberry quarters, blueberries, feta cheese, and almonds (if using). Drizzle with balsamic vinaigrette or poppy seed dressing just before serving.
Patriotic Yogurt Parfait
32 ounces Vanilla Yogurt
2 pints Blueberries
12 ounces Raspberries
Sprigs of fresh mint or additional fruit, for garnish
Layer yogurt, raspberries, yogurt and finish with blueberries.
Top with 1 more spoonful of yogurt then a sprig of mint or the garnish of your choice.
The exact ingredient amounts will vary depending on the size of the glasses you are using. Also, I prefer using whole milk yogurt for this recipe, to give it the richness of a dessert.
